		<description>As a child (40 years ago), our family employed a housekeeper, Mrs. Burgess, who had married an Englishman and lived in England for a time. She was a wonderful baker, her specialty being mince pies.  She would add ground round and apricot brandy to Bordon&#039;s None Such and allow it to marinate for a few days before bringing the makings to our house, where all of us children would sit around the table waiting for the 2&quot; rounds of plain pastry dough.  We assembled the rounds in front of us, dolloped a teaspoon of mincemeat, then added a top, and pressed the edges with the tines of a fork.  Then they would be placed on the cookie sheets and baked.  Sometimes, Mrs. Burgess would sprinkle red or green sugar on top.  Every Christmas, I have made mince pies, sometimes making my own mincemeat, but often using the same recipe as Mrs. Burgess.</description>

		<description>I did make the mince pies, and they were wonderful!  My husband couldn&#039;t have been more pleased at my efforts, and he quickly made them disappear.  I made them in a muffin tin, so they were the perfect size.  This recipe will be a Christmas tradition from now on - thanks!!!

And so as the pastry usually run out before the filling. She would put coconut topping on the mince pies - to make Snowy Mince Pies

These are fabulous, and using ground almonds instead is great too.

&lt;b&gt;Coconut Topping&lt;/b&gt;

3 egg whites stiffly beaten
1 Cup castor sugar
2 cups cocconut (or ground almonds)

Fold all together.

Make Mince Pies as usual, but instead of topping with pastry - top with Coconut Topping.</description>
